Lion’s Mane Mushroom “Crab” Cakes

About the Recipe

Ingredients

  • 1 oz Lion’s Mane mushrooms (shredded or broken into small pieces)

  • 1 egg

  • 1/4 cup mayonnaise

  • 1 tbsp Dijon mustard

  • 1 tbsp Old Bay seasoning

  • 1 tsp lemon juice

  • 1/2 cup breadcrumbs (Panko works well)

  • 1 tbsp parsley (chopped)

  • Salt and pepper to taste

  • Olive oil (for frying)

Preparation

  • Heat some olive oil in a pan and sauté the Lion’s Mane mushrooms until soft and slightly golden, then let them cool.

  • In a bowl, mix the egg, mayonnaise, mustard, Old Bay seasoning, lemon juice, breadcrumbs, parsley, salt, and pepper.

  • Add the cooled mushrooms to the mixture and combine thoroughly.

  • Form the mixture into small patties.

  • Heat olive oil in a pan over medium heat and fry the patties for about 3-4 minutes on each side or until golden brown.

  • Serve with tartar sauce or a lemon wedge on the side.
