Ingredients
1 oz Lion’s Mane mushrooms (shredded or broken into small pieces)
1 egg
1/4 cup mayonnaise
1 tbsp Dijon mustard
1 tbsp Old Bay seasoning
1 tsp lemon juice
1/2 cup breadcrumbs (Panko works well)
1 tbsp parsley (chopped)
Salt and pepper to taste
Olive oil (for frying)
Preparation
Heat some olive oil in a pan and sauté the Lion’s Mane mushrooms until soft and slightly golden, then let them cool.
In a bowl, mix the egg, mayonnaise, mustard, Old Bay seasoning, lemon juice, breadcrumbs, parsley, salt, and pepper.
Add the cooled mushrooms to the mixture and combine thoroughly.
Form the mixture into small patties.
Heat olive oil in a pan over medium heat and fry the patties for about 3-4 minutes on each side or until golden brown.
Serve with tartar sauce or a lemon wedge on the side.
